We finally did it!! After many requests for decaf, we finally gave in and went on the hunt for a decent decaf. There were two requirements: it had to be organic and it had to use the mountain water process to eliminate the caffeine. If you don’t already know, typical decaf coffee uses a chemical solution to remove the caffeine. No thanks!! The mountain water process is relatively new and it uses a water solution to replace the caffeine. This has two benefits. First – there are no chemicals –  yay!! Second –  the coffee particles in the water solution that are used to replace the caffeine leave the coffee tasting more like coffee and less like your typical decaf. That’s a win-win! This Honduran coffee is a wonderful decaf with some of the traditional nutty Central American notes you would see in your regular caffeinated version.
